Ultimate Rice Milk Recipe
Properly prepared, the taste of this rice milk is almost indistinguishable from real milk. The recipe below makes enough to fill one blender / large mason jar.
Ingredients
1/2 cup white rice
1/4 cup millet
1 rounded tablespoon sugar
1 level tablespoon oil
1/4 level teaspoon salt
1/2 level teaspoon potassium bicarbonate or baking soda
Water as needed
Instructions
1) Put rice, millet, and 1 cup water in blender. Blend for 3 minutes at middle speed. Blender must have sharp blades. This will make a puree.
2) Add oil, salt, baking soda, sugar. Then fill the blender with more water and blend for one minute.
3) Pour through fine mesh strainer into container.
4) Chill and shake well before serving.
Tips
Millet can be substituted with equal amount of rice if unavailable, but millet does make a positive difference. Millet should be the kind without hulls, looks like little yellow round seeds. It’s usually found in the bulk section of health food grocers.
Potassium bicarbonate can be bought from wine making supply stores, online or locally. Baking soda works too, but not as ideal.
This stuff will last about a week in the fridge.
